What you’ll need:
1 cup vanilla or natural vegan protein powder
1 cup Oat flour
1 cup Almond flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cup almond milk + 1 tablespoon lemon (let sit for 5 min)
4 eggs
2 tablespoons coconut oil
Other:
More coconut oil for frying
Raspberry sauce (unsweetened)
Sliced banana
Nutella
Maple syrup
Mix everything together in a blender until smooth.
In a frying pan, add 1/2 tablespoon coconut oil ok med heat. Pour three circles with a 1/4 cup measuring cup of better. Fry three small pancakes at a time flipping over when several small bubbles begin to appear.
Makes 14 small pancakes.
